The Ultimate Holiday Turkeyless Turkey

Dry Mix


  • 1/2 cup water
  • 1 tsp nutritional yeast
  • 1/2 tsp thyme
  • 1/2 tsp sage
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/4 tsp turmeric
  • 1/4 tsp garlic powder
  • 1 tbsp olive oil
  • 1/2 tbsp soy sauce or liquid aminos


  • Combine dry ingredients and mix to combine
  • Combine broth ingredients and mix to combine
  • Add broth to dry mixture and mix until a dough forms and all of the dry ingredients are wet
  • Form loaf with the vital wheat gluten dough and wrap tightly with cheesecloth to help the dough maintain its shape during cooking (*provide picture of this step*)
  • Submerge wrapped loaf into boiling water and cover. Boil for 55 minutes at a rolling boil. Add more water as needed to make sure the loaf stays submerged.
  • After boiling time has elapsed, use tongs to remove the loaf from water and place on a sheet of foil that has been greased with nonstick cooking spray.
  • Preheat oven to 450*F.
  • Once loaf is cool enough to unwrap, carefully unwrap the loaf from the cheesecloth and place the loaf directly on the foil. *provide picture of this step*
    Wrap tightly in foil and bake for 15 minues at 450*F.
  • Serve with gravy or other festive sides of your choosing.
